
Luscious layers of graham crackers, banana slices, custard and whipped cream

Ingredients
Custard:
3/4 cup sugar
6 large eggyolks
5 tbsp cornstarch
2 1/2 cups fresh milk
1 tsp vanilla
24 pieces graham crackers, ground
5 pieces lacatan bananas, peeled and sliced thinly diagonally
1 250ml all-purpose cream, whipped
Procedure
1. For the
custard: Whisk 3/4 cup sugar, eggyolks, and cornstarch in heavy medium
saucepan. Gradually whisk in fresh milk. Cook stirring constantly over
medium heat until thick, about 20 minutes. Remove from heat. Mix in
vanilla.
2. To assemble: Fill the bottom of a square glass dish
with half of the graham cracker crumbs. Cover with half of banana
slices, then half of custard. Repeat layers with remaining crackers,
bananas, and pudding. Set aside.
3. Cover top with whipped cream. If desired, sprinkle top with more graham cracker crumbs or with coffee.
4. Cool. Refrigerate, uncovered until cold, at least 3 hours.
